The following shows an excerpt from one of our chefs event diaries, as he heads out to cater for a corporate hospitality function.

OUTBOUND: Just left office with hog roast events team, had final brief, left with full list of ingredients and final changes that need making to the menus. Heading away from central office now in order to collect the organic beef and whole pigs which have been hanging up at our suppliers farm near Oundle. Met farmer, always amazed at how perky they are at this time of the day! Head out towards function destination, make phone contact with sous chef, make sure he has collected the vegetables, ready and cleaned by our farm producers over towards Prudhoe. Sit back, relax and enjoy the drive.
AT VENUE: Arrive and meet the hosts, two young and slightly nervous executives, a lot hinges for them on getting this function right. Settle them down. Off to meet sous chef, we discuss service order and begin to set up machines. Two pigs ‘spitted’ and ready to go, the new and improved hog roaster machines make this even easier than before. Once both pigs are turning we spit the beef and prepare. Season, season and season, get it right and it makes all the difference. Talk further with hosts, make them aware of all elements of service, ask if any other final adjustments. Prepare all vegetable dishes, garnishes to be made from scratch along with all serving sauces. Waiting staff arrive, bright and cheerful as ever, bouncing with youthful exuberance. Brief them on the event, the order of service and the clients specific wants. Timing is of the essence, so make sure that everyone knows what is expected. Service team are out serving champagne, large numbers coming fast, going to be a good party! Lend out some staff to help hosts sort out some seating arrangements, they’re happy to help as always.
Service started, canapés flowing, everyone clearly hungry. Once again the spitted pigs and beef are proving the main attraction, the machines allowing the creatures to be shown off to the full.
Main hog roast service went fantastic, more food than necessary, as always. Menu options really delivered the goods, organic produce always does. Getting to that point where host is slurring the words, but everyone is having a superb time! Great conclusion to the evening, hosts delighted and we withdraw discreetly, taking all rubbish offsite as we go.
INBOUND: Left the venue, disposed of rubbish. Serving staff debriefed and delighted with the evening. Sous chef shined today, really impresses. Everyone home now, rest and then its time to look forward to the next hog roast catered event!
We pride ourselves on being able to make your party or event a memorable one. We’ve all eaten great food at restaurants and fine eating establishments, however we are amazed to hear just how man of our customers have experienced consistent mediocrity as regards the standard of cuisine which they are subjected to at their own events on behalf of other event caterers. Often old fashioned (prawn cocktails followed by jelly anyone?!), the majority of event caterers have got used the fact that the well-mannered British public too often stand for second best. Our use of the spit roast and the hog roast within as a primary focus within our catering services has proven to be a total success and for all the most positive of reasons. Primary amongst the reasons is the topic of quality. When an animal such as a prime 90 kilogram hog is roasted from its completely raw state, the results are going to be good. When the creature, however, is flame roasted using lovely, dancing flames within a hot oven environment for 7 hours, the tastes are phenomenal. The turning element that the spit roast option brings helps to continually marinate the hog with its own basting juices which flow out and are quickly reabsorbed into the carcass of the hog.
Through this cooking method, it is always a real pleasure for us, as we carve, to see the eyes of our customers widen. From party functions in Kettering, to weddings in Daventry, as well as our victory roasts at Silverstone on behalf of F1 teams, seeing the pleasure on the faces of our customers never ceases to be a brilliant experience for us. Whilst the meat of the animal retains the majority of the natural juices (aided, of course, by our secret yet perfect seasoning recipes), the tastes and textures are lifted once again to even greater heights, as the retaining of all these juices form a component of the hog and spit roasting process that can be obtained through no other method of cooking. As the flesh of the hogs are slowly raised to their perfect eating temperature, the skin forms the most sensational crackling that is possible to create. As our hogs are so brilliantly sourced and are thus very healthy animals, the skin is nice and thick. After being scored at the outset and dressed using our special alt-based seasoning mix, the 7 hours under the brilliantly feisty flames, whilst being continuously soaked in basting fluids are enough to make the crackling both thick and absolutely delicious.
